Father’s Day - 2 Meals My Husband Loves

Now, I'm not normally the cook in the family, since my husband loves to cook. But there are times when I want to make something special or give Brandon a break. So, in honor of Father’s Day, I’ve decided to share a few easy meals I cook that Brandon loves every time.

Before we get into the recipes, please understand that I measure by the heart rather than with actual measuring cups. This is both good and bad: good because the recipes can be altered to your liking, and bad for those who prefer actual measurements. Cheesy, Creamy Spaghetti

Items needed:

  • Choice of spaghetti sauce (we use roasted garlic)
  • A can of cream of chicken soup
  • Shredded cheese
  • Broth
  • Preferred noodles (I personally like penne, rigatoni, or ziti.)
  • Onion
  • Garlic
  • Butter/oil
  • A pan large enough to hold the noodles and sauce at the end

Recipe:

Sauce:

  • Add a spoonful of butter to the pan.
  • Add garlic.
  • Chop at least 1/2 an onion and add it to the pan; caramelize.
  • Add spaghetti sauce. Rinse out the jar with broth instead of water to add more flavor. Add rinse mixture to the pan.
  • Add cream of chicken soup to the sauce and mix well.
  • Add shredded cheese to taste. I usually add a handful.

Noodles:

  • This can usually be started once you add the spaghetti sauce.
  • Follow the instructions on the box for perfectly cooked noodles.
  • Add a bit of stock for extra flavor.
  • Drain the noodles, then add them to the sauce.

Extra Add-Ons:

  • Feel free to add any meat you'd like. We've made it with pan-fried pork chops and chicken.
  • You can also put the noodles and sauce in the oven for 20 minutes, with cheese on top, for a baked version.

 

Fried Onion Chicken

Items needed:

  • Preferred cut of chicken (we usually use chicken breast or strips)
  • Egg
  • Lipton French onion soup mix
  • French crispy fried onions
  • Butter/oil
  • Mixing bowl
  • Pan

Recipe:

  • Preheat oven to 350°F.
  • Take your crispy onions and French onion soup mix and add them to a bowl. Crush the onions to your preferred size and mix together.
  • In a separate bowl, crack an egg for an egg wash.
  • Cut the chicken into bite-sized nuggets.
  • Dip the chicken nuggets into the egg wash, then coat them in the onion breading.
  • Oil the pan to prevent sticking.
  • Add the nuggets to the pan and bake for about 20 minutes. Flip the nuggets and check the internal temperature. Cook for an additional 10–20 minutes, or until cooked through.
